    Aren't you supposed to fill it up with coffee to the brim in order to build up pressure? I never saw anyone using a Bialetti with anything less.

    A couple things here. I would think distilled water would be lifeless. Water with oxygen still oxygenated in it from the tap (poured through a filter like Brita if you like) definitely makes superior tea and coffee water.

    Also, when you said this took so long to make in this stainless model it instantly reminded me of why stainless cookware is made with an inner ply of aluminum or copper, so you get the easy cleanup of stainless without interacting that affects flavor, and the fast heating up that another more heat conductive metal ply provides (or sometimes on cheaper stuff it's an aluminum disc on the bottom of the pan).

    That instantly stuck out as a design omission in this pot if you're taking that long to make coffee just because it's stainless.

    Also, with the aluminum version it never took very long for the buildup of coffee oils heated over and over again to taste rancid and worse, and you can't clean aluminum in the dishwasher.

    I don't think you're supposed to clean this one in the dishwasher either, per Bialetti's site, so I think some of the parts may still be aluminum? Filter basket perhaps? Also, despite what they say, the only way to get rid of this is to clean it with soap, and the rubber gasket should be pried out and so on to thoroughly clean all the parts.
